What does chicory taste like? Coffee substitute – chicory

Chicory is a truly wonderful drink. The taste is reminiscent of coffee, but it does not increase blood pressure and does not cause anxiety; on the contrary, it gently calms. It also helps the liver and kidneys recover, improves the functioning of the gastrointestinal tract, and normalizes metabolism. And most importantly, it lowers blood sugar levels.

A miracle drink, isn't it? But in order to take advantage of its benefits, you need to know for sure that this is not a counterfeit. As C’s examination showed, finding a real chicory drink on the shelves is far from easy.

Samples of nine brands of soluble chicory were sent to the laboratory: “Zdravnik”, “Tsikorich”, Elite Health Line, Russian Chicory, Great life, “Zdorovye”, Dr.Dias, “Tselebnik”, “Big Cup”.

Testing for inulin...

The substance responsible for most of the beneficial properties of chicory is called inulin. It is also an important indicator of whether the drink in front of you is real or counterfeit. It is inulin that makes chicory so beneficial. It lowers blood sugar levels, improves metabolism and digestion. That is, for diabetics, chicory is the healthiest drink.

According to the results of laboratory tests, only two samples - “Russian Chicory” and “Zdorovye” - contain at least 30% inulin by weight. It is precisely this content of inulin in soluble chicory that is provided for by GOST R 55512-2016, indicated in the labeling of these samples.

* chicory “Health” - with excellent results - 54.5 g per 100 g of inulin.

* “Russian chicory” - 30 g / 100 g.

Based on the research results, the remaining 7 out of 9 tested samples were included in the “black” list for deceiving consumers, because the amount of inulin in them turned out to be much less than that typical for chicory - per 100 g of product it is:

* 3 g - in a “Big Cup”,

* 4.5 g - in “Health Resort”,

* 5.7 g - in “Cikorich”,

* 8 g - in Elite healf line,

* 8.5 g - in “Healer”,

* 9.6 g - in Great life,

* 13 g - in Doctor Dias.

For a positive effect, it is enough for an adult to receive about 2.5 g of inulin per day, explains Andrey Mosov, head of the expert direction of NP Roskontrol.- In terms of cups of a drink made from powder containing 30% inulin, this is approximately 2 cups per day. The exact figure depends on the number of spoons of powder you use when preparing the drink. Accordingly, if you drink a drink that contains only 3% inulin, you will have to drink 21 cups, which is hardly possible. There will be no harm from chicory with a low inulin content; another question is why buy it at all, when for much less money you can buy a cereal coffee drink made from barley or wheat grains.

At the same time, the manufacturers of the drinks “Big Cup”, “Tselebnik”, “Zdravnik” promised customers 25 grams of inulin per 100 g of product and did not hesitate to label their products with GOST. The remaining 4 samples were manufactured according to specifications, and their manufacturers were silent about the inulin content in the product.

...and caffeine

The fundamental difference between chicory and two other popular hot drinks, tea and coffee, is the absence of the alkaloid caffeine, which has a negative effect on the central nervous system. This means it can be given to children and drunk at night.

But in one of the samples, namely “Cikorich”, a small caffeine content was found. Its presence, even in small quantities, indicates that some by-products or even waste from coffee production have entered the drink.

For all other indicators - the presence of heavy metals, microorganisms - there were no complaints about all the samples.

Let's talk about taste

The taste of soluble chicory also indirectly indicates its quality and the presence of inulin. This drink has a pleasant taste with mild bitterness and a fairly pronounced aroma characteristic of chicory. In its pure form, many people find the drink bitter, but with the addition of milk it softens. Moreover, it is in combination with chicory that calcium from milk begins to be well absorbed, which does not happen with other drinks

Experts assessed the organoleptic characteristics of the samples: taste, aroma, appearance, color.

The taste of “Cikorich” seemed watery to professional testers, without characteristic bitterness, and there was no aroma at all.

In the smell of Great life chicory, experts detected caramel notes that chicory should not have. There was a slight sweetness in the taste of the drink. In addition, the presence of white inclusions of unknown origin was visually noted. This may indicate that the drink contains some other ingredients besides chicory extract, or that the latter was processed incorrectly. This is also indicated by the low content of inulin in these samples.

The taste of Elite Health Line was called astringent, with inharmonious bitterness.

There were no complaints about the taste and smell of the other samples, including the falsified ones, which means that the consumer cannot always suspect a dirty trick using his senses. Testers from a focus group of consumers who tested only two samples not included in the “black” list liked the “Health” drink more. Slightly lower, but also satisfactory, are the ratings of “Russian Chicory”.

There are people who, for one reason or another, do not drink coffee, but they like the taste of this drink. I can drink coffee and I really love this drink, but I try not to drink it every day. But chicory instead of coffee - please. This, as it is called, coffee drink, or coffee substitute, coffee surrogate is not only tasty, but also healthy, and also very cheap.

For me, chicory and coffee are completely different drinks, and chicory only vaguely reminds me of coffee. In my opinion, they are very different in taste and aroma, although some consider them very similar.

After reading the article, you will find out why chicory is useful and which drink is better to choose.

What is chicory made from?

Common chicory is a plant of the Asteraceae family and is considered a weed. Chicory flowers have probably been seen by everyone who has at least once been in a forest or field where wildflowers grow. The upper part of the plant consists of long stems with blue or light lilac flowers. Blooms all summer from June to August.

Many people mistakenly call chicory cornflower. In fact, their flowers are very similar and the plants belong to the same family. However, it is chicory that is edible.

Freeze-dried chicory

The drink is obtained from the roots of this plant, which are ground and roasted.

Chicory, unlike coffee, does not contain caffeine and does not increase blood pressure.

Chemical composition and calorie content

  • Calorie content/energy value of chicory – 280 kcal/100 grams of product (dry)
  • Proteins – 4 g/100 grams
  • Fats – 0.2 g/100 grams
  • Carbohydrates – 81.7/100 grams

Chicory contains a certain amount of potassium and vitamin B6, but it is impossible to cover the daily dosage with these substances, since it is consumed in small quantities. Therefore, the benefit and value of this product lies in something completely different.

What are the benefits of chicory for the body?

The main value of chicory is that it contains a large amount of inulin. A quality drink should contain at least 30%.

Inulin is a polysaccharide, a carbohydrate that is not digested in the human digestive tract, and is a prebiotic.

Inulin has the following main beneficial properties for the human body:

  • Firstly, inulin is a natural anticoagulant, that is, it prevents blood thickening, thus preventing the formation of blood clots in blood vessels, thins the blood, and reduces cholesterol levels in the blood. That is, it is good for the heart and blood vessels. This means that people with hypertension can safely use this product.
  • Secondly, inulin is food for bacteria that live in the human intestine and form its normal microflora. Thus, by consuming chicory, we form normal intestinal flora, and immunity increases.

In addition, chicory lowers blood sugar levels, which is useful for people suffering from type 2 diabetes.

Contraindications for use

Chicory root is rich in oxalic acid salts (oxalates), and is therefore contraindicated for people with kidney disease (prone to the formation of oxalate stones).

Types of chicory

In the store you can find chicory:

  • powdered or ground;
  • sublimated;
  • liquid extract;
  • soluble.

Chicory powder soluble

Powdered or ground Chicory is obtained by grinding chicory root without heat treatment. This product is useful, but does not have a distinct taste and aroma.

Sublimated chicory is an instant product. It is obtained from frozen extract by dehydration.

Instant chicory– the most common product on the shelves of our stores. It is obtained by drying the root of the plant, after which it is roasted (heat treated) and crushed. The product is then treated with water, that is, extraction occurs, after which the resulting extract is boiled to obtain a dry powder.

Liquid extract– obtained by evaporating the liquid from chicory root.

Which chicory is better to buy and how to choose

Let's find out which chicory is healthier.

From the point of view of usefulness, liquid is the most preferable, since the root of the plant undergoes minimal technological processing and is a very rich concentrate, which means it contains more useful substances, including inulin. It’s not very convenient to brew it; it’s much easier to pour in the powder, but it’s not too annoying.

However, other options are also quite acceptable, although they contain fewer nutrients.

The following tips will help you choose a quality product:

  1. Make sure that the powder is crumbly and there should be no lumps inside the pack. If they are present, it means that the seal of the pack was broken, which could lead to spoilage of the product.
  2. The color of the powder should be moderately dark. A powder that is too dark will have a more pronounced taste, but it will be less beneficial, since a dark color indicates a strong degree of roasting.
  3. The taste of the drink should be slightly bitter, the aroma should be characteristic of the aroma of chicory. A product that is not at all bitter, mild in taste and not aromatic may turn out to be a fake.
  4. The powder must be homogeneous and free of inclusions. If you see whitish or lighter particles, cereals or maltodextrin (molasses) may have been added to the chicory.
  5. The powder should not generate dust when poured. If such an effect is detected, the drink may contain harmful maltodextrin (a fast carbohydrate that leads to an increase in blood sugar levels).
  6. Chicory 3 in 1 is not a healthy product, since in addition to the root itself it contains sugar, cream substitutes, preservatives, anti-caking agents and other substances that do not add any benefit to the drink.
  7. When brewed with boiling water, instant chicory, as a rule, does not foam and is easily stirred. If the drink contains grains, when brewing you will see foam on the surface and such powder will dissolve more slowly, clumping a little.

How to distinguish natural chicory from a fake

I offer a simple home test that will help distinguish a natural product from a counterfeit one. Dilute the drink as usual and add a couple of drops of iodine to it. If the iodine dissolves without changing color, then the chicory is real. If the color of iodine changes to purple, it means that the product contains starch, which means that cereal crops have been added to it - wheat, barley or rye.

However, this test will not detect the presence of maltodectrin in the drink, since its presence will not affect the color of iodine in any way.

By the way, some manufacturers offer chicory-based drinks with added cereals and do not hide this in the composition.

For example, you can find chicory with barley, with rye or with the addition of coffee, or even just barley in its pure form (at the moment in stores I see similar products only from the Staraya Melnitsa brand in cardboard packages, and several years ago I also bought drinks from the brand “Healthy pleasure” in tin cans, but now I don’t see them on store shelves).

Personally, I also buy such drinks and drink them with pleasure, since they are also healthy and have a more delicate taste than chicory in its pure form.

In what form to use

Use chicory as a drink. Brewed according to the instructions specified by the manufacturer. And this is approximately 1.5-2 teaspoons of powder per 200 ml of boiling water. Thus, in one glass we get approximately 15-25 kcal, which is quite a bit. Can be consumed both hot and cold.

Due to its high concentration, liquid chicory should be brewed in an amount of ¼ teaspoon. spoons per glass. The extract is consumed very economically. I bought a 200 ml package for 65 rubles, the two of us drank it for two or three months, and quite actively.

Ready-made chicory drink

You can add sugar and its substitutes, cream, milk, cinnamon and other spices to the drink, then it will taste more like coffee.

Some people like to mix coffee with chicory to improve the taste and aroma.

However, the healthiest drink will be in its pure form without sugar. I use it in different variations depending on my mood.

Among coffee substitutes, chicory ranks first in popularity and usefulness. This unpretentious plant with blue flowers grows in almost any soil, thanks to its high adaptability. Its dried roots are crushed and drinks are prepared that are slightly reminiscent of natural coffee in taste and color. How is this plant useful and can it replace coffee?

The benefits and harms of chicory

It is possible to determine what to drink – chicory or coffee – only after a detailed breakdown of all the properties of these drinks. Their benefits and harms are controversial and are still being studied in many scientific laboratories. Chicory drinks have been on sale for decades, but if previously they were considered a cheap substitute for coffee or even tea, today they are positioned as healthy products and are located on healthy food shelves.

Chicory roots are used as a substitute for coffee beans, although in fact their taste and smell are only slightly reminiscent of this noble drink. How are they useful? They consist of 60% water and the rest of the dry matter is represented by inulin, vitamins B, PP, C, A. It contains manganese, phosphorus, iron, potassium and sodium. Bitterness, tannins, organic acids, essential oil, proteins and fats are present.

This is what a chicory plant looks like

The most valuable is inulin, a polysaccharide that is considered an excellent sugar substitute for diabetics. In addition, it has anti-inflammatory and antimicrobial properties. In folk and official medicine, chicory is used in the following areas:

The root is especially useful for diabetes. In the initial stages, it allows you to reduce blood sugar levels, and in more serious stages, it helps prevent strong surges. A drink made from chicory gives energy without stimulating the nervous system, as it does not contain caffeine. This is one of the most important advantages in favor of a coffee substitute.

The benefits of the plant for weight loss have been noticed. Inulin normalizes blood sugar levels, which is important for those who cannot give up sweets. Pectin dulls appetite and prolongs the feeling of fullness. Triterpenes, also present in the root, help speed up metabolic processes, and vitamin B2 helps to effectively break down fats. The plant can cause harm only in case of allergies and too active use. The risk group includes people with urolithiasis, asthma and stomach ulcers. TEST: Tea or coffee - which suits you better?

The benefits and harms of coffee

Coffee, like tea, is one of the most controversial products for human health. Every year, admirers and opponents of these drinks replenish the knowledge base with both positive and negative research results. The benefits of coffee are as follows:

  • stimulates the nervous system due to caffeine content;
  • helps remove fluid from the body;
  • improves smooth muscle tone;
  • helps in the fight against atherosclerosis;
  • relieves swelling;
  • eliminates headaches;
  • helps to concentrate attention;
  • increases blood pressure;
  • accelerates blood flow, stimulates the work of the heart muscle.

The positive aspects of coffee can turn negative for people suffering from hypertension, cardiovascular diseases, and stomach ulcers. It is these patients who most often drink chicory instead of coffee or add it to beans to reduce the concentration of caffeine. The drink can cause harm even to a healthy person if you drink coffee too often.

What's better

A healthy person can afford to drink 1-2 cups of ground coffee a day without thinking about its negative impact on the body. Natural ground grains have a smell that most half of the world's population cannot resist. When the love for coffee turns into a pathological craving, it is better and healthier to make drinks from chicory with the addition of 1/3 coffee, and both ground and instant drinks are suitable here. This way you can preserve the aroma and taste of coffee without straining your nervous system and heart.

Unlike coffee, adults, children, and the elderly can drink chicory without harm to their health. This is another plus in his favor. Here it is considered not just as a grain substitute, but as a raw material with a medicinal effect. The difference between these two products is that the boost of energy received from a cup of coffee lasts longer than from a drink with chicory. That's why people love to drink it in the morning.

People suffering from low blood pressure and vegetative-vascular dystonia prefer to drink coffee rather than medicine, considering it less harmful to health and more effective for headaches. Many reviews confirm this fact.

Coffee, chicory and cereals - a healthy combination for a coffee drink

It is possible to determine which product is better only by the individual reaction of the body. Many hypertensive patients do not deny themselves the joy of drinking a cup of drink made from natural grains, since they do not notice any significant changes in the behavior of the cardiovascular system. Others, on the contrary, make drinks from chicory because they feel too much excitement and rapid heartbeat. Both products are good if consumed in moderation and only of proven quality.

How to make coffee from chicory

You can move slowly from coffee to chicory. First, take 1 part soluble or ground root and 3 parts beans, so the taste is not much different from the original 100% coffee. Later, their volumes are balanced, and then coffee is completely eliminated.

How to make a delicious coffee drink? Experts recommend using dried and crushed chicory roots for this. They need to be ground in a coffee grinder, pour boiling water at the rate of 1-2 tsp. for 200 ml of water, simmer for 10 minutes, leave for another 5 minutes, strain and drink. You can add sugar and milk.

The best taste and aroma is obtained from a drink made from freshly roasted chicory root with the addition of green coffee in a 2:1 ratio. The whole root is cut into small cubes with a knife, combined with green coffee and fried in a dry frying pan until they give up all the moisture and acquire a dark brown color. Later, the mixture is allowed to cool for 24 hours, ground in a coffee grinder and a delicious invigorating drink is prepared. It is better to fry as much raw material as is needed for a week to prepare the drink.

The chicory drink foams well and is similar to coffee

In the store, chicory can be purchased in different forms. This is an instant drink, crushed root, liquid chicory, a mixture of chicory powder, oats and natural coffee. Before consuming any of them, it is recommended to read the instructions and prepare the drink based on the indicated dosage. You should not drink more than 2 cups of any of them per day.

Reviews

Angelina: Chicory cannot be compared with coffee. These are completely different products, both in taste and properties. The latter is contraindicated for me, although the smell of coffee just makes me go crazy - I really want it! I found solace in instant chicory. It contains a lot of microelements, the taste is quite pleasant, especially if you drink it with milk.

Anatoly: In the struggle for a healthy lifestyle, I revised my diet and left a lot of products in the past, including coffee, since it is almost impossible to buy 100% high-quality grain, and I no longer want to drink all that crap. I found a good manufacturer, I am confident in the naturalness of the raw materials, so I enjoy drinking chicory in the mornings and afternoons without sugar or other additives.

Diana: Let’s put it this way: I didn’t see any similarity with coffee, a true coffee lover cannot be deceived or bribed. Even assurances of the great benefits of chicory did not convince me to exchange the aromatic grains for a cheap root. I’m probably not ready to take full care of my health yet.

Gulya: Chicory only vaguely resembles coffee, I bought it out of curiosity, and it rather reminded me of the Soviet “golden ear” that was given at school. I brewed it, added milk and sugar, even caramel syrup - still no pleasure from the drink. It is better to allow yourself a small cup of coffee a day than three substitutes.

Chicory as a coffee substitute: instant and ground, benefits and harms

Every person has heard more than once that excessive consumption of strong black coffee can harm the human body. That is why more and more men and women are trying to find a worthy alternative to natural coffee. Chicory is excellent for this purpose.

Why drink chicory

Some doctors believe that the maximum allowable amount for an adult is no more than 2 cups of aromatic drink throughout the day. In order to decide what to replace coffee with, you need to know exactly what effect this drink has on the human body.

If the above limit is exceeded, the following side effects may occur:

  • Sudden mood swings, emotional instability.
  • Sleep disorders, increased nervousness and irritability.
  • Decreased ability to concentrate.
  • Stool disorders, flatulence, feeling of nausea.
  • Disturbances in the digestive system.

In order to avoid the above health problems, it is recommended to limit the consumption of the drink and switch to coffee substitutes, for example, chicory.

Features and composition

Chicory is a herbaceous plant from the Asteraceae family that attracts attention with its charming blue flowers. I also call it blue dandelion. Today, the plant grows almost everywhere, in both tropical and temperate climates.

Chicory coffee is prepared from the rhizome of a medicinal plant. Most often it can be found on forest edges, meadows, lowlands, fields and roadside steppes. To prepare a tasty and healthy drink, ground root of the plant is used.

The benefits of chicory have led to its widespread use in medicine. The plant contains a huge amount of vitamins, microelements and other substances vital for the human body.

  • Vitamins of group A, B, C, E, K, PP.
  • Calcium, potassium, phosphorus, magnesium, manganese, zinc, iron, copper, sodium, selenium.
  • Resins.
  • Phenols.
  • Organic acids.
  • Tannins.
  • Inulin.
  • Essential oils.
  • Proteins and fats.

Chicory is the most popular and commonly used alternative to coffee. When processing the rhizome of the plant, special aromatic compounds are formed, which in their composition are as similar as possible to caffeol - a specific substance that gives coffee its unique aroma.

It is worth noting that chicory does not contain caffeine and, accordingly, does not have such a strong stimulating effect on the state of the nervous, cardiac and vascular systems. The invigorating and strengthening properties of the drink are influenced by the extremely rich content of vitamins, microelements and other useful components.

Beneficial features

Before deciding what to consume more often - chicory or coffee, you should familiarize yourself with all the beneficial properties of this plant.

It is recommended to include chicory in your menu for people who have pancreatitis, neurasthenia, iron deficiency anemia, cholelithiasis, dysbacteriosis, and pathologies of the cardiovascular system. In addition, the medicinal plant contains a special substance called inulin - this is a substance similar to regular sugar, which is ideal for people with diabetes.

In appearance, the chicory drink is also very similar to coffee

The benefits of chicory are extremely multifaceted; it has various positive effects on the human body:

  1. Increased immunity level.
  2. Normalization of the digestive system, which occurs by stimulating the growth of normal probiotics.
  3. A pronounced antioxidant effect, due to which accumulated waste and toxins are removed from the body.
  4. It is used for arthritis, as it has anti-inflammatory and antispasmodic properties.
  5. Normalizes the functioning of the cardiovascular system, prevents the development of hypertension and atherosclerosis.
  6. It improves the functioning of the central nervous system, eliminates nervousness, anxiety and other disorders.
  7. Improves stool.
  8. Helps reduce blood sugar levels.
  9. Removes bile.
  10. Tones, gives vigor and activity, improves performance.

This coffee substitute perfectly stimulates metabolism and removes all accumulated waste and toxins from the body. It is for this reason that an aromatic drink from a medicinal plant is recommended for men and women who closely monitor their figure and want to lose weight. Of course, in this case, the liquid should be consumed without sugar and cream.

Chicory root does not contain caffeine. The invigorating effect that occurs after drinking the drink will be milder than that of coffee.

Drinking this alternative coffee is also recommended if you have various skin diseases - psoriasis, neurodermatitis, eczema, chicken pox, furunculosis, oily seborrhea, and acne.

Regular consumption of 1-3 cups of chicory drink per day is ideal for people with a history of diabetes. The most effective use is considered to be in the initial stages of the disease - it quickly reduces blood sugar levels and prevents the further development of diabetes.

Harm of chicory

Chicory coffee has several contraindications for use. For example, it is strictly not recommended to drink the drink in case of an allergic reaction or individual intolerance to chicory.

Main contraindications for use:

  • Severe form of cholelithiasis - due to the choleretic effect, blockage of the duct with stones can occur.
  • Stomach or duodenal ulcer, gastritis, duodenitis or other inflammatory processes in the digestive tract.
  • Severe disorders of the central nervous system - epilepsy, schizophrenia, nervousness.
  • Haemorrhoids.
  • Phlebeurysm.
  • Hepatitis, cirrhosis and other liver pathologies.
  • Asthma.
  • The drink is not recommended for children under 3 years of age.

This coffee substitute should be used with extreme caution by women during pregnancy and breastfeeding. The maximum allowable dose is 1 cup of drink throughout the day.

To make coffee or chicory easier for the stomach to accept, you can add milk to the drink.

It is also worth knowing that excessive consumption of even such a healthy drink can lead to stool disorders, bloating, and attacks of nausea.

Instant chicory is best consumed 1-2 cups per day, otherwise side effects may develop.

Chicory can be purchased in supermarkets or pharmacy chains. It is presented in the form of powder or granules, with various useful additives - chamomile, rose hips, ginseng and other medicinal plants.

Cooking recipes

It is recommended to introduce chicory into your diet gradually - to do this, mix equal parts of the rhizome and natural or instant coffee in a cup. This will help you get used to the new taste of the drink. Gradually the amount of chicory increases, and coffee is completely eliminated.

The drink is prepared very simply - to do this, pour 1-2 teaspoons of soluble powder or freeze-dried chicory into 200 ml of hot water (preferably not completely boiling water, otherwise a significant part of the beneficial substances will be destroyed). What are the benefits of chicory and is there any harm from coffee made from it?

On this page (contents):

What is chicory

Let's get acquainted first. Chicory is a herbaceous plant of the Asteraceae family and includes two cultivated species and six wild ones. With beautiful honey-bearing bright blue flowers, similar to cornflower or daisy, the name of this plant means “coming beyond the fields.”

The Mediterranean is considered the birthplace of chicory. This drought-resistant perennial plant is widespread in the temperate climate zone. It grows along river banks, along roads, near populated areas, and in wastelands.

Chicory root is used for medicinal purposes, and the root and leaves are used in cooking. In many countries, the plant is grown specially, setting aside entire fields for planting. In Russia, salad varieties are not grown, and wild plants taste harsh.

Benefits of chicory

The popularity of chicory is explained by the beneficial properties and composition of substances found in its roots.

In addition to plant proteins, they contain:

  • organic acids;
  • pectin;
  • B vitamins;
  • vitamin C;
  • potassium;
  • magnesium.

Of particular note is the high content of inulin (up to 60% of the dry weight of the root). This polysaccharide is easily absorbed and leads to a decrease in blood sugar, which makes chicory a valuable product in the treatment and rehabilitation of patients with diabetes.

Chicory preparations help improve metabolic processes in the body and strengthen the nervous system, which is useful for sick, weakened people and those who want to lose excess weight.

Decoctions, tinctures and compresses from chicory root can be of great benefit to patients suffering from skin diseases, such as:

  • seborrhea,
  • neurodermatitis,
  • eczema,
  • chicken pox,
  • furunculosis,
  • acne,
  • psoriasis.

Chicory is a powerful diuretic, this is its benefit and harm at the same time. For people with high blood pressure, this property will be useful, but for people with low blood pressure, it can be harmful, since the pressure can drop even more.

Useful properties of chicory and recipes based on it

The beneficial properties of chicory have been known since ancient times. Another famous doctor Ibn Sina (Avicena) recommended taking the root of the plant for gastrointestinal disorders and eye inflammation.

Medicine uses chicory decoctions as:

  • antimicrobial,
  • anti-inflammatory,
  • diuretic,
  • choleretic,
  • antipyretic,
  • anthelmintic.

The glycoside intibin (which gives a bitter taste) was found in chicory roots, which is used in pharmaceuticals as a vasodilator, relieves attacks of tachycardia and, together with B vitamins, helps normalize the activity of the nervous system.

Traditional medicine recipes

Skin compress: pour crushed chicory roots with boiling water in a ratio of 50/50%, apply to the affected area for 20 minutes.

A decoction for those who want to lose weight: brew 1 teaspoon of crushed chicory roots like coffee in 0.5 liters of water, then cool, strain, take 1/2 cup 30 minutes before meals, 3 times a day.

These properties alone could deservedly create the popularity of chicory, however, the roasted and ground root of the plant is better known as a coffee substitute.

Chicory in cooking

The roots and leaves of cultivated chicory species can be used in salads (with sweet peppers, cucumbers and onions), vinaigrettes (with pickles, green peas, carrots, onions, eggs).

Chicory in any form gives food a particularly piquant taste; stewed in vegetable or butter, with egg-butter sauce, it is used as a side dish for potato or meat dishes.

Chicory - coffee substitute

Chicory coffee is a product obtained from chicory root and used as a coffee substitute. It perfectly quenches thirst and gives vigor. Pregnant women and children over three years of age can drink it.

In the middle of the last century, when natural coffee had to be “procured,” chicory-based drinks were more popular. With the increase in coffee supplies, the popularity of chicory has decreased, but more and more health-conscious people are remembering it.

People who need to give up coffee can start drinking chicory drinks. A morning cup of delicious coffee can easily be replaced with a chicory drink. Its aroma and taste are different, different from coffee, but no less pleasant.

Chicory coffee recipe

Chicory roots are dug up in the fall, cleared of soil, washed, cut and dried, then fried in the oven until golden brown. Before use, finely grind in a coffee grinder.

Preparation:

Chicory is brewed like coffee: 0.5-1 teaspoon per glass of boiling water. Sugar and milk to taste.

Advice: if at first the taste of the chicory drink seems unusual or not very tasty to you, then you can add a little ground coffee to it.

Properties of chicory coffee

Chicory coffee contains the complex carbohydrate inulin (10 to 15%). Once in the body, inulin slowly lowers blood sugar levels, so it can maintain its level at a constant level.

InulinInulin is also considered a type of soluble fiber, which makes it useful for preventing constipation and for absorbing toxins from the intestines.

Since inulin is very resistant to the action of digestive enzymes, it reaches the intestines practically unchanged. There he is exposed to microorganisms of the intestinal flora, which use him in their diet. Thus, inulin is considered a prebiotic because it can stimulate the growth of bifidobacteria.

Intibin In addition to inulin, chicory root is rich in a valuable substance - intibin. Intibin stimulates the production of bile, which, in turn, increases appetite and promotes digestion.

Minerals, Omega 6 and Omega 3 acids We must not forget that chicory coffee is rich in minerals, including potassium, phosphorus and calcium, as well as essential fatty acids: linoleic (Omega 6) and alpha-linolenic (Omega 3).

Benefits of chicory coffee compared to regular coffee

Coffee is primarily a stimulant. Chicory can be considered as a regulator of digestion and intestinal function. Both coffees have diuretic properties, but they do so in very different ways.

Chicory has many advantages over coffee without the negative properties of caffeine, here are the main ones:

  • Coffee is a stimulant because the caffeine it contains increases cellular metabolism. Chicory contains a set of nutrients (magnesium, calcium, potassium, fiber, Apigenin, vitamin C, etc.) that increase diuresis without affecting the nervous system.
  • Caffeine has muscle relaxant effects. Chicory can also reduce muscle pain, but with the help of other components (apigenin, magnesium, rutin, etc.)
  • Both coffees have antioxidant properties.

Harm from consuming chicory and coffee made from it

Chicory roots are not toxic and do not exhibit significant side effects, but there is a report that an aqueous extract of the roots inhibits spermatogenesis in mice and exhibits significant contraceptive activity in rats. Such experiments have not been carried out on humans.

Harm and contraindications to consuming chicory:

  • Oddly enough, one of the contraindications to the use of chicory is associated with its beneficial properties. By promoting vasodilation, drinks from this plant can negatively affect patients suffering from varicose veins and hemorrhoids.
  • It is necessary to limit or completely avoid the use of chicory for certain types of gastritis.
  • This plant should not be used by people who have a tendency to form kidney stones, as the root is rich in oxalates.
  • Parents should be aware that increased appetite caused by chicory drinks can lead to weight gain in children.

Harm and contraindications to drinking coffee and other chicory drinks:

  • Chicory coffee has absolutely all the contraindications that chicory root has.
  • Coffee or chicory tea can be harmful to children under three years of age because their nervous systems are not yet fully developed.
  • People with neuropsychiatric diseases should use chicory drinks with caution.

Instant chicory - how to choose

When looking for an alternative to their favorite coffee, many people choose chicory. But not everyone knows what benefits and harms its regular use has. Its taste is very similar to coffee, but the plant has completely different properties.

Chicory is a perennial medicinal plant of the Asteraceae family. There are both wild species and cultivated ones, which are grown in special fields.

The roots of the plant are used as a natural coffee substitute. They have a similar taste and aroma, and have only a positive effect on the body. For the abundance of useful qualities, they were nicknamed “king-root” by the people.

Dry, untreated roots of the plant can be found in pharmacies. But the drink made from them will not resemble coffee, because they must first be roasted. It is better to prepare medicinal tinctures and decoctions from such roots.

Processed chicory is divided into 3 types - soluble, ground and liquid concentrate. They retain the beneficial properties of the plant and have a pleasant taste and smell.

Eating instant chicory is convenient at home because its preparation does not take much time. It can be drunk in much larger quantities than coffee beans because it does not contain caffeine and contains beneficial substances.

Chemical composition

The popularity of chicory drink is due to its positive effect on the body. It contains the following elements:

  • vegetable proteins;
  • vitamins of group B, A, C and PP;
  • pectin;
  • organic acids;
  • potassium;
  • iron;
  • calcium;
  • magnesium.

The root of the plant contains a large amount of inulin, a polysaccharide that reduces sugar levels. For this reason, the drink is useful for people with diabetes.

What is healthier - coffee or chicory?

Coffee invigorates, helps cope with fatigue and removes toxins. It is valued for its wonderful aroma and specific taste, which has won the love of millions of people. But the circle of those who are strictly forbidden to use it is also quite wide.

It is contraindicated for hypertension, gastrointestinal problems, insomnia, heart disease, as well as during pregnancy and breastfeeding.

Chicory is a healthy and practically harmless coffee substitute. Its beneficial effect on the body is difficult to overestimate. The root of the plant is rich in vitamins and minerals that help solve several health problems.

A drink made from chicory is especially relevant during pregnancy. During this period, women are strictly limited in nutrition. Doctors prohibit the consumption of caffeine-containing products. Then chicory acts as a harmless alternative to coffee and tea.

Benefits of chicory

Being a natural coffee substitute, chicory drink brings both benefits and harm. However, there are many more positive qualities. Its regular, but moderate, use produces the following positive effects:

  1. Improvement of the nervous system. B vitamins have this effect. A person feels a surge of strength and vigor;
  2. Flavonoids protect the body from the inhibitory effects of free radicals and protect cells from destruction;
  3. Inulin lowers the amount of sugar in the blood and reduces the negative effect of eating sweets. Therefore, chicory is recommended to drink not only for diabetics, but also for those who want to lose weight. In addition, the drink promotes the breakdown of fats, and converts nutrients obtained from food into energy. Its regular use speeds up metabolism;
  4. Vitamins and macroelements have a positive effect on the condition of the skin and hair. They stimulate collagen production, and using the tincture for external use helps cope with skin diseases, speed up the healing of scratches and strengthen hair;
  5. Inulin, which is a soluble fiber, has a beneficial effect on intestinal microflora. It also removes harmful substances from the body, which promotes better absorption of vitamins and minerals;
  6. Chicoric acid increases the body's resistance and strengthens the immune system;
  7. Potassium and magnesium strengthen the heart and blood vessels, reduce the amount of cholesterol in the blood. Therefore, the drink is recommended for people suffering from hypertension, atherosclerosis, tachycardia and some other diseases;
  8. Vitamin C promotes excellent iron absorption, which in turn increases red blood cell production. This is an excellent prevention of anemia and a good adjuvant in its treatment.

In folk medicine, chicory is used both separately and in combination with other beneficial plants. Infusions and decoctions are prepared from its leaves, flowers and roots to help solve health problems.

Harm and contraindications

Despite its natural composition, the drink sometimes causes negative consequences.

The following contraindications for use are noted:

  1. Individual intolerance – observed in rare cases, but if arrhythmia, dizziness or pressure surges occur, use should be stopped immediately;
  2. Hypotension - the drink dilates blood vessels, which causes an additional decrease in pressure;
  3. Severe cough and asthma - causes increased symptoms of the disease due to active blood flow to the tissues;
  4. Varicose veins - this contraindication is due to the vasodilating properties of the drink;
  5. Gastrointestinal diseases - it is not recommended to drink in some forms of gastritis.

Due to the large amount of vitamin C, excessive consumption of chicory drink causes hypervitaminosis. For the same reason, people with an allergy to ascorbic acid should not drink it.

You should not drink chicory with milk, because these two liquids are not compatible. With this combination, some people note the appearance of severe arrhythmia. It is allowed to add plant analogues of cow's milk.

A drink made from chicory is a worthy analogue of harmful coffee. Most side effects only occur when it is abused.

How to brew and drink

A drink from instant chicory is prepared in the same way as regular coffee - 2 tsp. Brew with boiling water.

You can make the powder yourself from dry roots. To do this, they must first be fried, as a result of which they will acquire a characteristic aroma. Then chop thoroughly and brew as needed.

You can also use the drink to solve problems in the body. For example, to get rid of toothache you need to pour 1 tbsp. roots 250 ml of boiling water and leave for half an hour. Then rinse your mouth with warm infusion.

For liver diseases, the following recipe is useful: chop the roots and leaves, pour boiling water over them (at the rate of 2 tablespoons per half liter of water), simmer for 15 minutes, and then strain. Take half a glass half an hour before meals 2-3 times a day, after adding 1 tsp to the decoction. fruit vinegar and 2 tbsp. honey

Chicory drink is an excellent preventive remedy that has a healing effect on the body and enriches it with useful substances. If you use it in reasonable quantities, it will only bring benefits.

Coffee cannot be confused with chicory. The taste characteristics are not so similar that without hesitation one can refuse one drink in favor of another. Understanding what is healthier: chicory or coffee allows you to make a choice.

Good coffee enchants with its rich taste and unsurpassed aroma. Of course, chicory is inferior to it in terms of taste, but it takes revenge due to its beneficial properties.

A substitute is necessary for people who try to consume only healthy natural products in order to be healthy and full of vitality. Which drink is better: natural or instant coffee, chicory? Let's analyze the general characteristics.

Natural option

Strong coffee gives the body the necessary jolt, excites the nervous and autonomic systems, and speeds up the functioning of all internal organs. The benefits are clear - a person gets the opportunity to quickly restore performance, increase concentration and slightly raise blood pressure.

Abuse of the drink leads to heart problems, deterioration of metabolic processes and diseases of the digestive system. There is a risk of dehydration, weakened immunity and premature aging. Such harm is difficult to ignore, so coffee lovers are forced to reduce the frequency and volume of consumption of their favorite drink and look for a suitable substitute.

Maximum benefit is achievable:

  • You can safely drink coffee in small quantities (1-2 cups) in the first half of the day.
  • Workers in hazardous industries and smokers need to drink coffee for medicinal purposes - the drink removes toxins and halves the risk of malignant tumors in the lungs and liver.
  • The grain drink has a low calorie content and provides significant benefits in complex diets by reducing appetite and increasing the need for drinking water.
  • Weakly brewed coffee with milk gently tones the psyche, increases resistance to depression and alleviates chronic fatigue.
  • The drink allows asthenic people with stable low blood pressure to be more energetic.

Soluble

Instant coffee raises blood pressure and “wakes up” the body not as intensely as grain coffee, but often causes significant harm to the digestive system. The negative attitude towards instant drinks is due to the dishonesty of many manufacturers. However, high-quality products are significantly healthier than bean coffee, since they have a smaller “impact effect”.
